It was a peachy weekend at our house! Our local orchard had a bushel of peaches on discount for canning. I took advantage of the opportunity and canned four batches of peach jam, 16 pints of peach slices. I also made peach pie filling for the freezer and a peach cobbler. It looks like many of our friends and family will be getting peach jam for Christmas! I have one major canning session left this year – apples coming up soon!
Since I was busy with peaches, I didn’t get a lot of work week cooking done. I did make two loaves of pear walnut bread that was delicious. One loaf is already devoured, while the other was packaged for the freezer. I also precooked some chicken breasts for Monday night dinner.

Monday- BBQ Chicken Sandwiches (use leftover chicken)
Tuesday- Stuffed Pizza Rolls, Green Salad
Wednesday- Pulled pork sandwiches, cole slaw
Thursday– Buffalo Cauliflower Bite Wraps (make roasted cauliflower, add hot sauce and make into a wrap with lettuce and ranch dressing. Vegetarian version of buffalo chicken wrap!)
Friday– Tortellini Pasta
