I found some time this weekend to do a little dinner prep for the work week! I love it when I am organized – it makes the week run so much smoother. Fall is definitely in the air in central Virginia. We had the windows open all day Sunday and enjoyed the cool breeze! If this weather continues, you will probably see more slow cooker meals and soups on our menu plan soon!

Monday- Baked Corn Dog Muffins, Salad
Tuesday- Lasagna (Made on Sunday)
Wednesday- Pulled Pork Sandwiches (Using slow cooked pork roast already in freezer)
Thursday– Egg Salad Sandwiches (We have an abundance of eggs and this is so easy to make!)
Friday– One-Pot Basil Tomato Pasta
