Sunday afternoon was all about cooking in my house. I finally managed to get a few meals prepared ahead of time. With my busy schedule, I have had little motivation to cook recently. I am determined to get back to cooking homemade meals though!
Sunday I made chicken & black bean enchiladas, spaghetti bake, cinnamon french toast sticks and pizza muffins. Most of our meal plan will be made up of these items this week. The french toast sticks are in the freezer for a quick breakfast. Although it took a couple of hours to prep these meals, I feel really prepared for this busy week!
