Spring break is over and the boys head back to school this week. I anticipate a very busy week as spring sports are in full swing! In fact we have an activity every day this week. This always makes dinner a struggle. We rely on quick and easy meals this time of year. Most of the time the kids eat before I get off work so they are ready for their game. I on the other hand end up eating very late – usually 8pm. Thank goodness for the microwave!

Monday- BBQ Sandwiches (hubby to crockpot the meat), coleslaw
Tuesday- Lamb Gyro with Tzatziki Sauce (I made a leg of lamb on Sunday and we have extra meat. I will make the Tzatiziki Suace Monday night to make this a really easy meal!)
Wednesday- Mini Meatball Sliders (Meatballs in freezer)
Thursday– Homemade Pizza
Friday– Grilled Shrimp Scampi Recipe, Orzo Pasta with Spinach Recipe
