Here we go, full speed into the week after Easter! We had a fabulous Easter Sunday, celebrating with hubby’s brother and his family. Due to the holiday, I didn’t get my usual work week menu plan prep done. Thankfully we do have lots of leftovers! I made a ham that will be the base for many recipes this week.

Monday- Leftover Ham, Macaroni & Cheese, Green Bean Casserole
Tuesday- Egg Salad Sandwiches, Veggies (Eating on the run for baseball game and karate)
Wednesday- Ham & Cheese quesadillas (Eating on the run for baseball game and tennis lessons)
Thursday– Ham & Bean Soup (slow cooker)
Friday– Homemade calzones
