On Saturday, my boys and I competed in a Karate tournament in North Carolina. Tournament days are always long with emotions all over the board. Plus the travel time really wears me out too. Sunday was not productive for me. My body had reached it’s limit and I needed a day of rest. So instead of cooking ahead for the week, I napped! My boys are on Spring break this week too. We will rely on easy meals that hubby and the boys can throw together while I’m at work!

Monday- Corn Dog Muffins, Mac & Cheese
Tuesday- Turkey Burgers and Sweet Potato Fries
Wednesday- Homemade Pizza
Thursday– One Pot Tomato Basil Pasta
Friday– Beef & Bean Pasta Skillet
