menu plan monday

The bitter cold has returned to Central Virginia and snow is on the way. That means hearty meals for us! Sunday I made a homemade three cheese lasagna. It was the perfect hot meal for the 20 degree weather we had. I also made lentil and barley soup for my lunches this week. I used chicken broth but the rest of the soup is all veggies. My house smelled delicious as both the soup and lasagna cooked at the same time! That’s one of my biggest time saving tips, while one meal is cooking, prep another.
