Work Week Menu Plan Week of 1/26/15

Can you believe this is the last week of January? The only good thing about time flying by is that we are closer to being through winter – my least favorite season! We have a busy week as Capt. M and I will be entering a karate tournament on the weekend. Of course that means we will be at the dojo getting our last practices in throughout the week! I did some cooking Sunday to help make dinner easy this week. I also pulled some pumpkin bread from the freezer for snacks. I love having quick breads stockpiled in the freezer!

Pizza-Calzones

Monday- Slow Cooker Beef Roast and Pumpkin Mac & Cheese (made on Sunday, I swear you can’t taste the squash puree!)

Tuesday- BBQ Beef Sandwiches (use leftover roast), green salad

Wednesday-  Pizza Calzones

ThursdayFish Tacos

Friday– Eating out
