An overcast Fall day meant a lazy Sunday for the boys and I. After church, we watched two movies in a row! Although my to-do list was a mile long, it was nice to chill with the boys for a few hours. I did get a head start on meal prep for the week. Plus, mid-week we’ll be roasting a turkey! Kind of odd, but we’ve had a turkey in the freezer for a few months and it really needs to be cooked. It didn’t defrost in time for Sunday prep – so hubby will cook it for me on Wednesday.
I made a lasagna for Sunday dinner and teh leftovers will be good for lunch. I also made a chocolate banana cake! This is the best recipe to use up ripe bananas and it’s fairly healthy!

Monday- Pizza Rolls, broccoli, kiwi (used ham instead of pepperoni, made on Sunday)
Tuesday- Ham, Egg & Cheese Bake (made Sunday, kind of like a quiche)
Wednesday- Turkey! (We won’t have time for a full on turkey meal so most likely we’ll have turkey sandwiches.)
Thursday– ??? Leftovers possibly, or something with turkey!
Friday– Enchiladas (use leftover turkey)
