As we head into the first few days of May, it appears that we are in for several days of rain. The rain could certainly shake up our schedule this week as Mr. B is supposed to be finishing up tennis lessons and Capt. M is supposed to have a baseball game. I have easy meals in mind for these potentially busy days but have a feeling our plans might change!
I did make a lasagna this weekend that will be eaten as leftovers. I also made muffins and snack mix for the boys lunches.

Monday- Lasagna (leftovers)
Tuesday- Potato Gnocchi with lower fat alfredo sauce, broccoli
Wednesday- Chicken Nuggets, Potato Tots, Applesauce; for adults quiche in freezer
Thursday– Turkey Burgers, sweet potato fries
Friday– Fish Tacos

Yes it’s a little healthier than regular alfredo sauce! It doesn’t have butter in it however the cream cheese will add some calories! You could always use low fat cream cheese though! Thanks for stopping by!
