We are slowly adjusting to our new schedule. I don’t get home until close to 6pm after picking up the kids. Capt. M is wipes out from Kindergarten and needs to be reading books by 7pm. That leaves just one hour to get dinner on the table, baths and PJs on. Yes, it’s like a whirlwind of an evening!

Monday- Egg Biscuit Bake (Making some changes to this recipe. We have an abundance of fresh eggs again!)
Tuesday- Chicken Enchilada Skillet Meal (Chicken already cooked from weekend)
Wednesday- Italian Sausage Bake (Cook pasta and sausage the night before)
Thursday– Grilled Shrimp & Vegetable Couscous
Friday– Grilled Pork Chops & Polenta

Your menu plan looks great! Grilled Shrimp and Vegetable Couscous looks like a real winner. I’ve got to try that couscous. It looks delicious, and it’s healthy!
