I did a lot of cooking on Sunday and I hope to have new recipes posted for you this week! Cooking on the weekend gives me a head start for the work week meals. I cooked a large whole chicken, slow cooker sweet potato casserole, sausage mushroom stuffing muffins and an apple tart. I will use the leftovers throughout the week and repurpose them!

Monday- Steaks, Stuffing Muffins (Recipe coming soon! leftover from Sunday)
Tuesday- Curry Chicken and Brown Rice
Wednesday- Sweet Potato Pancakes (Using leftover sweet potato casserole.)
Thursday– Potato Gnocci with Chicken & Sun Dried Tomatoes
Friday– Italian Sausage Risotto
