Brussels Sprouts are wonderful shaved into a salad or paired with pasta—or just saved to enjoy as a side dish as in Roasted Brussels Sprouts with Lemon Recipe. Don’t forget about these emerald green gems this time of the year. You’ll find them fresh and ready for sauteing, roasting, or shaving! If you are shaving Brussels Sprouts for a salad thinly slice or shave with a mandolin, and dress with lemon vinaigrette, chopped pecans, dried cranberries and crumbled goat cheese for a festive fall salad.
Recently, I (Litsa) served a similar Brussels Sprouts Salad with a friend for lunch. We enjoyed our salad with tall glasses of water and a warm, decadent three cheese grilled cheese. The warmth of the grilled cheese was perfect with the healthy, filling Brussels Sprouts Salad. Both my guest and I were delighted to enjoy this simple lunch together (and she who had never had shaved Brussels sprouts thoroughly enjoyed it)!
How do you enjoy eating Brussels Sprouts?
