Winter squash is favorable but you just might be in a “butternut rut”! If you’ve had one two many butternut squash dishes, branch out this winter—-try delicata!
Delicata squash is less assertively sweet than butternut! Another plus for this winter squash: Delicata skin is so thin and tender that you can leave it one and eat it. The skin adds subtle snap to the buttery flesh.
I (Litsa) was delighted to be introduced to delicata squash through the pages of an old issue of Cooking Light. If you’re a squash lover too, don’t miss this subtle squash with a bold flavor like winter cranberries. Add your own butter, salt, and cranberry/nut mixture and/or try Cooking Light’s Roasted Delicata with Cranberries and Pumpkin Seeds.
Join me in the hunt to look for delicata squash at your local grocery store!
