It’s still grilling season at our house! Steak and potatoes are cooked weekly. However, we’ve never had purple potatoes at our home——nor have I ever seen them! I’ve only heard of them by listening to a segment presented by Dr. Oz. I was surprised to locate these “Purple Passion Potatoes” at Kroger last weekend. I checked the price on the back of the 280z bite size bag of potatoes——-$1.29 was definitely worth a taste! The color had me curious: Were the potatoes really purple inside?
As you can see in the picture above, the potatoes have a dark purple skin, almost black! When I cut each bite sized potato in fourths, I was REALLY surprised by the pretty purple! I quickly browsed for recipes for these purple potatoes on www.chow.com—-and found a thread of conversation about how to cook these little starchy potatoes! I opted for tossing the purple potatoes around with some olive oil, sea salt, and Italian Seasoning. I baked them for 20 minutes at 425 degrees!
They were delicious! I love potatoes to begin with——loaded with butter and sour cream or Greek Yogurt, Fage, drizzled with lemon juice and salt/pepper, etc! I love white potatoes and orange potatoes as my toddler calls sweet potatoes! And now, I can add to my love of potatoes, purple potatoes!
The bag described them as “slightly sweet, yet nutty with a plump texture and firm skin”. I think I have to agree! I couldn’t stop popping them into my mouth! Tomorrow, my four year old will open her lunch box to find purple potatoes to dip into her red ketchup! Oh! What fun it’ll be to imagine this endeavor at her preschool. I, on the other hand, will have to make up eating too many purple potatoes tonight. I plan to toss a green salad together and top it with purple potatoes for the nutty flavor—-and I think I’ll drizzle them with olive oil and balsamic vinegar!
I saved a small batch of purple potatoes to boil. Wondering if my water will turn purple? I think, I’ll discover the answer this week when I toss another salad together with my boiled purple potatoes, purple onions, oregano, salt, pepper, olive oil, & red vinegar!
Have you ever tried purple potatoes? How did you prepare your purple potatoes?
