So, hubby was raised with having dessert every night and I was not. For me dessert was only for a special occasion. To satisfy hubby’s (and our kiddos!) sweet tooth, I have been coming up with healthier options. One thing that we all LOVED was frozen kiwi slices dipped in chocolate.
This is what I did:
(4) Kiwis
1/2 Cup Chocolate Chips
1 Tablespoon Virgin Coconut Oil
Cut the skin off the kiwi and slice it. Place the slices on waxed paper on a baking sheet and place in the freezer. Once the kiwi is frozen, it is ready to dip in chocolate.
Place the chocolate chips and coconut oil in a microwave safe dish. Heat for one minute and then stir. If not melted completely, heat in 30 second intervals.
Dip frozen kiwi into the chocolate and then place on waxed paper. Place them back in the freezer until chocolate is set. Store in an airtight container in the freezer!
Unfortunately I did not get a nice pretty picture of the frozen chocolate dipped kiwi like I wanted. We ate them too quickly! You could do this same technique with a variety of fruit. Somehow the chocolate just seems healthier when their is fruit underneath!
