Tomato, Sausage & Cheddar Bread Pudding Recipe

This is a very versatile recipe for bread pudding. Experiment with different ingredients to suite your families liking. Mix it, bake it, eat it and enjoy it—for brunch, lunch or dinner!

First you need to cook the sausage. Once the sausage is done, mix it with the tomatoes, cheese, onions and herbs and transfer to a baking dish. Try using different types of sausage for a different flavor!

Cube the bread and place over top of the sausage mixture. This is a great recipe to use up your leftover french bread!

The last step before baking is to add the egg and cream mixture. In about 45 minutes you will have a flavorful meal!

Ingredients
  • (2) 12 oz rolls Jimmy Dean Reduced Fat Pork Sausage
  • ½ tsp Italian Seasoning
  • Salt & pepper
  • 3 cups cheddar, shredded
  • (2) 14.5 oz cans of dice tomatoes, drained
  • 4 green onions, thinly sliced
  • 1 tbsp basil, dried (or approximately ¼ fresh basil, finely chopped)
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ¼ packed brown sugar
  • 3 cups cubed bread (French or Italian works best)
  • 6 eggs
  • 1 ½ cups heavy whipping cream
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup grated parmesan cheese (I used a parmesan, Asiago & Romano cheese blend)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a 9x13 inch baking dish with oil or cooking spray.
  3. In a medium sauté pan over medium-high heat, season pork sausage with Italian seasoning, salt & pepper and cook until no longer pink. Drain excess grease and break up sausage so there are no large chunks.
  4. In a large bowl combine shredded cheddar, diced tomatoes, sausage, green onions, basil, oregano, garlic powder and brown sugar; mix well and then transfer to greased baking dish.
  5. Stir in bread.
  6. In the same large bowl whisk together eggs, heavy whipping cream, ½ tsp of salt & ½ tsp of pepper; pour over bread mixture.
  7. Sprinkle top of casserole with parmesan cheese.
  8. Bake for 45-50 minutes or until knife inserted in center comes out clean.
  9. Serve & enjoy!
