Salsa is great as a chip dip or to add flavor to your favorite meal. Salsa is really easy to make and adapt to your liking. Make it spicy or mild, whatever you prefer. I like that salsa also adds a dash of color to the plate. Use a variety of peppers to make the colors really pop!
- 1 small onion, finely chopped
- 1 garlic clove, pressed
- 2 limes, juiced
- 1 orange, juiced
- pinch of salt
- 1 Tablespoon olive oil
- 6-7 small Campiri Vine Tomatoes, chopped
- 1 orange bell pepper (or use red or yellow or a combination!)
- 1 jalapeno, seeded and diced
- 1 can black beans
- 1 can garbanzo beans
- 1 cup frozen corn
- ¾ cup chopped cilantro
- In a large bowl combine onions, garlic, juice from lime and orange and salt. Stir until combined and let rest while you chop the rest of the vegetables.
- Add the rest of the ingredients to the bowl.
- Mix well and serve!
