National Strawberry Day was created to celebrate those little red fruits that begin making their debut in our refrigerators again this month. The strawberry plant was a gift from Chile that made its way to North America in the 1750s. The plant is fairly easy to grow (something you might think about planting in your backyard this year)! If growing strawberries isn’t on your plan this year, don’t forget about their many accessible forms that are available to you at your local grocery store and/or early farmer’s markets: fresh, frozen, dried……or get ready to buy more fresh strawberries to make your own strawberry jam, ice-cream, and more! This past season, I (Litsa) have enjoyed using locally grown strawberries to make homemade chia jam with them. My parents and I bought the berries last May and after washing, slicing, and freezing them—-they lasted all fall/winter to create chia jam that was part of school lunches. They packed in flavor and fiber with each bite. On one occasion, I was out of fresh lemon juice to add to our weekly batch of homemade strawberry chia jam. Thus, I substituted fresh squeezed orange juice that added even more punch to these rub-ilicous strawberries.
Whether you’re enjoying fresh or frozen strawberries this season, don’t forget that these red fruits are the perfect treat year round if you plan accordingly—-make freezer room and/or pantry shelf room this year! As you plan, enjoy a fresh salad topped with strawberries today!
