One of my New Year’s Goals is to cook more for my family. In order to do this, I need to get back into menu planning! The first thing I do is check my freezer and pantry. Right now my freezer is a little overstocked- and that is just my inside freezer!
Even though Kroger is having a Frozen Food Mega Event this week, I have no need to participate.
Since I work full time, I cook more over the weekend. On Saturday and Sunday I cook large portions of meat such as a pot roast, whole chicken or pork loin. I use the leftover meat to make meals throughout the week.
My Dinner Plan:
Monday – Beef Stroganoff and Cooked Carrots (Use leftover roast from Saturday night)
Tuesday – Creamy Pesto Chicken & Pasta (Use leftover chicken from Sunday – Whole Chicken in the Slow Cooker)
Wednesday – Shrimp Alfredo & Broccoli
Thursday – Leftovers
Friday – Ham & Scalloped Potatoes (Leftover ham in freezer)
Saturday – Pork Loin and Zucchini Casserole
Sunday – Quiche (Pie crust in freezer and we have an abundance of eggs from our chickens.
One thing that I keep in mind is flexibility. We are a busy family and schedules change. Sometimes I change around what night we eat which meal but at least I have a plan to start with.

Great idea and nice menu! Once every 6 months or so I try to make meals from what I have on hand in the freezer and pantry. I can usually go for about a month just buying some fresh produce and dairy. The great thing is never finiding anything thats been around so long it has to be tossed in the garbage.

Don’t you love having a stockpile? I could make meals for a month too based on items in my freezer and pantry. We do go through a ton of milk and produce though. My boys are milkaholics! Thanks for stopping by!
