With pinterest and all of the other social media sites out there, I think that we are under pressure to make these beautiful gourmet meals. Don’t get me wrong, I do enjoy pinterest and I like a good savory meal. However, not every meal has to be picture perfect and up for a culinary award. Many of our meals are simple filled with protein, lot’s of produce and maybe a small amount of carbohydrates.
The above image is from a recent dinner. Organic chicken legs were on manager’s markdown at Kroger so that part of the meal was easy. The rest was based on the produce we had – sweet potatoes, plum, kiwi, tomatoes, cucumber and carrots. A little slice of grilled ciabatta bread and dinner was done!
What I often do is cut op the produce and place it on a plate in the middle of the table. I let my boys choose what they want and how much. Since I let the boys play a role in what they are eating, they actually eat more produce! At this dinner sitting, the whole fruit plate was consumed and most of the vegetable plate too.
Here is another example of my boys picnic lunch. A slice of cheese, turkey, crackers, banana and cucumbers. This is as close as we get to a lunchable!
When writing up your menu plan don’t feel the pressure of coming up with an extravagant meal. Go back to basics and make it simple. There is nothing wrong with a simple meal! And it just might be a little healthier for you too!
