During the summer months we use our grill a lot. Not only is it easy, but I like to cook without turning on the oven on hot days. One of my favorite things to grill is vegetables. They taste so good!
Slice your vegetables for the grill. You want a thicker slice- about 1/4″ to 1/2″. Eggplant, yellow squash, zucchini and asparagus are what we usually grill. Place vegetables on a sheet of foil. Brush olive oil on both sides of the vegetable slices. Dash with seasoning like garlic salt, black pepper and parsley.
Heat up your grill- usually about medium heat for vegetables. Place the foil on the grill with the vegetables on top of it. Cook for about 15-20 minutes total. I flip the vegetables over a few times during the cooking process.
I have been trying to cut out carbohydrates for myself at dinner time. Earlier this week I had the above pork loin and grilled vegetables for dinner (plus a second helping of those grilled vegetables!). It was a satisfying meal and healthy! I didn’t miss the carbs at all.

Corn on the cob is our favorite grilled veggie. Brush it with olive oil, season as desired and wrap tightly in aluminum foil. Grill over medium heat for 20-25 minutes, turning it often. It’s much better than boiling it!
Thank you Renee! We tried grilled corn last night and hubby and I really enjoyed it. The kids prefer the boiled method- boo! I think they were put off by the grill marks. Oh well, I know hubby and I will be grilling our corn!
