Picking out high quality meat that the grocery store can mean a bit of a splurge at the grocery store. BEGIN with knowing what you are buying. Here’s a few notes to know where those cuts come from and what you can expect for flavor.
Pork Tenderloin: This is the full pork loin. It is one of the most tender cuts of pork. The mild flavor pairs well with rubs, stuffing and flavorful sauces.
Beef Tenderloin: This piece of meat comes from the loin. It is the highest-quality beef roast. It has a fine texture with a mild but rich flavor.
Beef Rib Roast: This meat comes from the ribs. This juicy, fine-grain cut has a rich, beefy flavor enhanced by generous marbling.
Prior to shopping for meats, take in consideration these types of cuts and think through your menu plan. Are you serving the meat in a dish or is it serving as the dish? The answer to this question may help you decide which meat selection to choose. If you are slow cooking the meat, you can choose a cheaper cut. Slow cooking makes the tougher cuts tender. You wouldn’t want to slow cook a rib roast though – that would be a waste of money!
