It’s cookie baking time! An old favorite is gingersnap cookies. They are perfect with a cup of coffee or anytime! I (Litsa) have made this recipe four times with great success! Everyone loves them! This recipe was adapted from the recipe found here.
- 1 cup unsalted butter, room temperature
- 1 cup firmly packed brown sugar
- 1 cup granulated white sugar
- ½ cup molasses
- 1 large egg
- 3 cups unbleached all-purpose flour
- 2 teaspoons baking soda
- 2 tablespoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground allspice
- Pinch ground cloves
- 1 teaspoon vanilla extract
- Preheat oven to 375 degrees
- In large mixing bowl, cream together softened butter, brown and white sugars, molasses and vanilla.
- When mixed well, add egg, beat until smooth.
- In medium-sized mixing bowl, whisk together flour, baking soda, ginger, cinnamon, allspice and cloves.
- Set mixer at lowest speed and add dry ingredients. Mix until incorporated.
- Use a generous tablespoon and scoop dough onto a cookie sheet.
- Bake at 375 for about 10 minutes.
- Cookies will first puff up as they spread, but then will deflate and become flat. When the cookie falls, they are done!
