Okra is still growing in my mother-in-law’s garden this month (Litsa’s). We can’t eat it every day so I’ve been freezing the okra to enjoy at later dates. The two inch okra spears can be frozen whole and/or cut. I chose to freeze ours cut for quick skillet side dishes (Fried Okra).
First, I washed the garden okra.
Next, I let it air dry (or you can pat it dry with paper towels).
Then, I cut the okra into bite size portions. I used the flash freeze method to freeze the okra on trays by placing them in the freezer long enough to ice the vegetable’s outer layer.
Next, I placed the cut, icy spear pieces into Ziploc bags and labeled them for future use.
Now, they are in our freezer waiting to make the week’s menu plan.
