Mint Chocolate Chip Ice Cream has always been my favorite to eat and now it’s one of my favorites to make as well! If you’ve ever considered purchasing an ice cream maker for home use, Ashley highly recommends it! She loves creating our favorites and some new combinations too! Ashley uses her Kitchen Aid Mixer with the ice cream attachment to make homemade ice cream. If you don’t have a Kitchen Aid Mixer, there are several ice cream maker options for under $30!
- 1 cup whole milk, cold
- 3⁄4 cup sugar
- 2 cups heavy whipping cream, cold
- Pinch of salt
- 2-3 tsp. peppermint extract (more or less to taste)
- Green food coloring
- 1 tbsp. crème de menthe or vodka (the alcohol keeps the ice cream from freezing as solid giving it a creamy consistency)
- 1 cup chocolate chips (any variety or chopped candy bars will also work fine)
- In a large bowl whisk together milk, sugar, whipping cream, salt, peppermint extract and alcohol until sugar is completely dissolved.
- Add food coloring until you reach desired color.
- Transfer to ice cream maker and churn to initiate the freezing process according to machine’s instructions.
- When ice cream has thickened, transfer to freezer safe container and freeze
- for 30 minutes.
- Remove from freezer, mix in chocolate and continue freezing for at least 2
- hours.
- Serve & enjoy.
