Quick breads are one of my favorite treats to have. They are so easy to make. I love that this recipe creates a moist and spongy bread with a refreshing lemon taste. This lemon loaf recipe is very close to the Starbucks lemon loaf. And you can make this bread for soooo much cheaper than what they sell at Starbucks!
One thing to note with this recipe is to use lemon extract in the bread batter. Lemon oil and lemon juice are not suitable substitutions for lemon extract. However, lemon juice is used to make the lemon glaze after the bread is done baking.
This recipe was adapted from Averie Cooks.
- 3 large eggs
- 1 cup granulated sugar
- 1 cup Greek yogurt
- ½ cup vegetable oil
- 2 tablespoons lemon zest
- 2 tablespoons lemon extract
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup confectioners' sugar
- 3 tablespoons fresh lemon juice
- Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan and set aside.
- In a large bowl, add the eggs, sugar and Greek yogurt. Whisk vigorously until smooth and combined.
- Drizzle in the vegetable oil while whisking to combine.
- Add the lemon zest, lemon extract, and stir to combine.
- Add the flour, baking powder, salt, and stir until just combined, don't overmix. Some lumps will be present and that's okay, don't try to stir them smooth.
- Pour batter in prepared pan, smoothing the top lightly with a spatula. Bake for about 40 minutes and then add a tented piece of foil to the top of pan to prevent excessive browning. Bake for another 10 minutes, or until top is domed, set, and toothpick inserted in the center crack comes out clean.
- Allow loaf to cool in pan on top of a wire rack for at least 30 minutes before turning out onto rack to cool completely before glazing.
- For the lemon glaze, in a small bowl, add the confectioner's sugar and slowly drizzle in the lemon juice while whisking until smooth and combined. Play with the sugar and lemon juice amounts a bit as necessary for desired consistency and flavor.
- Evenly drizzle glaze over bread before slicing and serving.
- Serve & enjoy!
