Oatmeal & blueberries make a delicious breakfast combination and joined together in this recipe they make a delicious quick bread that will go down easy in the morning, afternoon or night!!!

Ingredients
  • 2 cups all purpose flour
  • 1 cup rolled oats
  • 1 cup sugar (or corresponding measurement for sugar substitute)
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp allspice (if you don’t have any allspice combine equal parts cinnamon, cloves & nutmeg)
  • ¾ cup skim milk
  • ½ cup butter, melted
  • zest from one LARGE orange (approximately 1 tbsp)
  • 2 eggs
  • 1 ¼ cups fresh or frozen blueberries
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 9x5 bread loaf pan with cooking spray or Baker’s Joy on the bottom only.
  3. In the bowl of a stand mixer combine flour, oats, sugar, baking powder, baking soda, salt and allspice, then add milk, butter, orange zest and eggs.
  4. Using the flat beater attachment, turn mixer to “STIR” setting and mix for 30-45 seconds or until just combined. If you don’t have a stand mixer you may mix by hand with a spatula but be sure not to over mix.
  5. Remove from stand mixer, add blueberries and gently fold into the batter.
  6. Spoon into loaf pan.
  7. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Serve & enjoy!
