Fast, easy and delicious—this side dish is loaded with protein and pairs great with seafood dishes, Mexican dishes and chicken—very versatile and at less than $2 dollars to make its budget friendly and will serve 4-6 individuals!
- 15.25 oz. can black beans, rinsed & drained
- 14.5 oz. can diced tomatoes, drained (I used one seasoned with basil, oregano & garlic)
- ½ tsp. garlic, minced
- ½ tsp. dried cilantro
- Salt & pepper
- Combine all ingredients in a small saucepan and heat over medium to low heat for 8-10 minutes or until heated through.
- Stir occasionally, but be careful not to mush the beans, they soften considerably as they cook.
