Apples are at the lowest price of the year which means it’s a great time to bake with apples! I love the smell of apples cooking. Well actually it’s probably the smell of the spices that are generally used with baking apples! Cinnamon really reminds me of autumn and everything yummy to eat!
These muffins can be made lower fat by substituting applesauce for the oil. I do this all of the time when baking and achieve good results! Two other surprise ingredients in this recipe are almond milk and Greek yogurt. Remember that if you don’t have almond milk on hand, you can easily make homemade almond milk.
- ¼ cup brown sugar, packed
- 2 tbsp. all purpose flour
- 2 tbsp. old fashioned rolled oats
- ½ tsp. ground cinnamon
- 2 tbsp. unsalted butter, melted
- 3 cups all purpose flour or whole wheat white
- 1 ½ tsp. ground cinnamon
- ½ tsp. ground nutmeg
- 1 cup unsweetened vanilla almond milk
- ½ cup brown sugar, packed
- ¼ cup sugar
- 6 tbsp. vanilla Greek yogurt (may substitute yogurt of choice)
- ¼ cup vegetable oil or unsweetened applesauce
- 2 eggs
- 3 ½ tsp. baking powder
- ⅛ tsp. baking soda
- ½ tsp. salt
- 2 cups apples, peeled and chopped into small chunks
- Preheat oven to 425 degrees F.
- Prep a 12-cup muffin pan with cooking spray or Baker’s Joy.
- Prepare streusel topping with the first 5 ingredients. In a small bowl mix together brown sugar, all purpose flour, oats, cinnamon and melted butter with a fork to form a crumbly mix; set aside.
- In a large bowl sift together flour, cinnamon and nutmeg.
- In a separate bowl whisk together milk, brown sugar, sugar, yogurt, oil, eggs, baking powder, baking soda and salt.
- Gently fold wet ingredients into the dry until just combined. Do not over mix.
- Fold in the apples.
- Spoon the batter into the muffin cups ALL THE WAY TO THE TOP.
- Sprinkle the streusel topping over each muffin.
- Bake at 425 for FIVE (5) minutes then immediately reduce temperature to 375 degrees for an additional 15 minutes or until toothpick inserted into center comes out clean.
- Let cool for 10 minutes in pan before serving.
