Last week I made my friend Amanda’s recipe for Cheesy Chicken Empanadas. They were so good! I ended up altering the recipe a bit to come up with a new appetizer.
Curry Chicken Wonton Appetizer
2 Chicken Breasts, marinate in Italian Dressing
1 package Wonton Wrappers
1/2 cup Shredded Cheese
4 ounces softened cream cheese
1 Teaspoon Curry Powder
1 Teaspoon Garlic salt
1 egg, beaten
Dice up chicken and cook until no longer pink. In a bowl mix cream cheese, shredded cheese, curry and garlic salt. Add chicken. I used a fork to shred up the chicken a bit.
Take a wonton wrapper and place a large Teaspoon full of chicken mixture in the middle of the wrapper. Brush edges with egg.
If you are wondering why the egg is so yellow, we have our own chickens! Farm fresh egg yolks are bright yellow.
Fold wrapper corner to corner to form a triangle. Use a fork to crimp the edges shut.
Bake at 375 degrees for about 10 minutes.
Tips
- You can freeze these before cooking. Just stop after you fold the wrapper into a triangle. Place on a cookie sheet and freeze for a few hours. Then place in a freezer bag.
- If you don’t like curry, try another spice. There are really so many variations to this idea!
