Last week I went to just planning the work week meals. This worked very well for me. I am trying a couple of new recipes this week- trying to broaden our menu a bit!
After I planned the menu and looked back over it, I see we are eating very little meat this week. That was not planned- it just happened that way! I am sure I will add some meat into the chili on Friday. To keep hubby happy, I am sure we will have to have steak over the weekend!
Monday: Sweet Potato Pancakes (I pulled sweet potato puree from the freezer this weekend and never go around to making anything! I will make extra pancakes for the freezer.)
Tuesday: Salad and Potato Cheddar Soup (soup already made in freezer)
Wednesday: Fettuccine Alfredo & Broccoli (Lower fat version based on the Kraft recipe. Use chicken broth and cream cheese instead of butter and cream!)
Thursday: Lasagna (I will put this together on Wednesday night so it can easily be put in the oven by hubby.)
Friday: Slow Cooked Chili (I’ll share my recipe next week!)
I have a couple of recipes I will post throughout the week as well as Super Bowl recipe ideas- so keep coming back!
