Apple Cranberry Bread Recipe

I was in the mood for a fruity bread this last weekend and came up with this Apple Cranberry Bread recipe. What I love about this bread is that it is not overly sweet. I also used half whole wheat flour and replaced the oil with applesauce so it is relatively healthy. Mr. B said “Mom this bread is tasty and delicious!” Trust my 3 year old, it is good!

Apple Cranberry Bread

1 Cup Sugar
1 Large Apple, peeled and diced
1/4 Cup Applesauce
1 Egg
1/4 Cup Craisins
3/4 Cup Whole Wheat Flour
3/4 Cup All-purpose Flour
1 teaspoon Cinnamon
1/2 teaspoon Baking Soda
1/4 teaspoon Baking Powder
1/4 teaspoon Salt
1/4 teaspoon Nutmeg, ground

Preheat oven to 350 degrees

In a large bowl mix sugar, diced apple, applesauce, egg and craisins. In another bowl, combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, salt and nutmeg. Add the dry mixture to the wet ingredients and mix well.

Grease a 8x4x2 loaf pan. Pour the batter into the loaf pan. Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted near center comes out clean.

Tips

  • If you don’t have whole wheat flour you can use regular flour.
  • Experiment with other types of fruit- add raisins, dried blueberries or additional craisins.
  • Since this was a healthier bread, I served it for breakfast this week!
