Seasonally spicy this cake showcases all that is wonderful about holiday baking! If you love ginger and ginger based baked goods this cake is for you! Plus it will make your house smell wonderful while baking!
For this recipe you will need to use the homemade gingerbread spice mix we posted a few weeks ago. If you don’t have any of this mix made up, it’s really simple to make. There are only six ingredients needed to make the gingerbread spice mix and most of them you most likely have on hand.
You will also need a bundt pan to make this gingerbread spice cake. If you don’t have a bundt pan, they are available for under $10 on Amazon.
To finish off the cake, dust it with powdered sugar. Make sure the cake is cool before you add the powdered sugar though. Otherwise the powdered sugar will melt!
- 3 cups unbleached all purpose flour
- 1 tbsp. ground ginger
- 3 tsp. gingerbread spice mix
- ¼ tsp. salt
- 1 cup butter at room temperature
- ½ cup packed dark brown sugar
- 1 large egg
- 1 cup molasses
- 2 tsp. baking soda
- 1 cup boiling water
- Powdered sugar (garnish—optional)
- Preheat oven to 350 degrees F.
- Prep a bundt pan with Bakers Joy or grease and lightly flour.
- In a large bowl sift together flour, ginger, gingerbread spice mix and salt.
- In a separate bowl cream together butter and sugar until light and fluffy, scrape down the edges of the bowl periodically.
- Add egg and beat until light and fluffy, scrape down the edges of the bowl periodically.
- Add molasses and mix on low speed until well incorporated.
- In a small measuring cup dissolve baking soda in boiling water.
- To complete the cake batter begin mixing ⅓ flour mixture into butter mixture on low until just blended, followed by ½ baking soda/water mixture again mixing until just blended. Continue alternating until all ingredients have been added and blended into the batter (DO NOT OVER MIX).
- Spoon or slowly pour batter evenly into the bundt pan, tap bottom of pan gently on counter to burst any air bubbles and bake for 40-50 minutes or until a toothpick inserted in the center comes out clean. Oven temperature and baking pan shape, size and thickness may effect bake time so watch carefully and adjust bake time accordingly.
- Cool for 10-15 in the pan then remove and transfer to a wire rack to cool completely. Sprinkle with powder sugar if desired.
