I ended the summer creating many different summer salsas and pico de gallo recipes that called for lemons and limes. Additionally, I was finding myself adding lemons and limes to many of my fresh juices like the Lean & Green Juice—the hint of lemon or lime just added to the decadence of the juice. Thus, I needed lemons and limes juiced ALL.the.TIME. The result was to find them at rock bottom prices and freeze them in ice cube trays so that I could have fresh lime or lemon juice anytime I needed it to add to a recipe and/or juice.
I started by using Renae’s Kitchen Tip: Roll Lemons. Then, I commissioned the help of my husband. After slicing the lemons for him. I gave him a bowl and a fork to juice the lemons. I then spooned out the seeds and added the lemon juice to the ice-cube trays. Next, we started on the limes. They were processed for freezing in the same manner.
I ended up having extra lemon juice than I had ice-cube trays. But it wasn’t a problem. We poured the lemon juice into a Ball jar and housed it in the refrigerator for use on marinating pork chops, chicken, making homemade salad dressings, and adding to lemon water.
Today, I found another bag of limes for just $0.99—so when you consider the daily price of limes, it pays to buy them prior to needing them for use in the kitchen. Juicing the lemons and limes will also save me time in the kitchen when other prep work takes precedence for creating clean eating foods for the family.
