Pico de gallo is also known as salsa fresca. It is a traditional Mexican salsa that is great with chips or to accompany your favorite Meixcan dish. Pido de gallo is a fresh salsa – none of the ingredients are cooked. This salsa is very simple to make; just chop the produce and combine. While traditional pico de gallo is tomatoes, onions and jalapenos; this recipe uses some other peppers to yield a milder spice.
- 2 cups chopped seeded yellow tomato (I used green tomatoes that turned semi red)
- 1 cup chopped orange bell pepper (red will do too)
- 3⁄4 cup chopped peeled cucumber
- 1⁄2 cup minced onion (sweet)
- 3 tbsp chopped hot pickled banana pepper
- 2 tbsp chopped cilantro
- 1⁄4 tsp salt
- 1⁄4 tsp black pepper
- Juice of 1⁄2 lime
- Combine. Chill. Serve with your favorite chips!
