Work Week Menu Plan: Off & Running

I have an extra busy week since I am teaching a menu planning class after I get off work. That means I will not be home for dinner for three meals this week. This is always a challenge since hubby doesn’t really cook! I did some cooking this weekend to help prepare for this busy week!

For snacks I made:

low-fat-apple-muffins

Low Fat Apple Cinnamon Muffins

Strawberry Fruit Rollups

Apple Crisp

Monday- Roasted Whole Chicken, Pumpkin Mac & Cheese, Salad(Made mac & cheese on weekend)

Tuesday- BBQ Beef Sandwiches, Broccoli (Made a beef brisket over the weekend)

Wednesday- Chicken Enchiladas (Use leftover chicken from Monday)

ThursdayBaked Chicken Nuggets, Tater Tots, Carrots (Made chicken nuggets over the weekend)

FridayDixie Stampede Creamy Vegetable Soup Recipe, Corn Bread
