Honey & oats—yum! This is one of my favorite breads to make!
- 1 ½ cups water
- ½ cup honey
- ½ cup light butter
- 1 cup quick cooking oats
- 5 ½-6 ½ cups bread flour (may substitute with all-purpose flour)
- 2 tsp salt
- 4 ½ tsp active dry yeast (equivalent to 2 packages of active dry yeast)
- 2 eggs
- 1 egg white (or 1 tbsp liquid egg white)
- 1 tbsp water
- 1-2 tbsp additional oatmeal
- In a small sauce pan heat water, honey and butter until it reaches a temperature between 120-130 degrees.
- In the bowl of a stand mixer (I use a 6 quart KitchenAid mixer) combine oats, 5 cups of flour, salt & yeast. Attach spiral dough hook to mixer and mix ingredients for 15-20 seconds on speed 2.
- Gradually add the heated honey mixture and continue mixing on speed 2 for 1 minute, then add eggs and mix for 1 additional minute.
- Add remaining flour a ½ cup at a time while continuing to mix on speed 2 until dough starts to clean the sides of the mixer bowl. Mix for 2 minutes more.
- Remove dough from mixer bowl, shape into a ball and place in a large greased bowl, turn to coat all sides then cover with wax paper and drape with a towel. Allow to rise in a warm area free from draft for 1 hour or until doubled in bulk.
- Prep #2 8 ½ x 4 ½ loaf pans with Bakers Joy or lightly grease and flour.
- After rising, punch down dough and divide in half. On a lightly greased or floured surface roll out each portion into a rectangle with a rolling pin (this process removes gas bubbles). Starting at the end nearest you begin rolling dough tightly, pinch ends and turn under loaf, pinch any other remaining open seams and place each in prepared loaf pans.
- Set aside to rise in a warm area free from draft for 1 hour or until doubled in bulk.
- Preheat oven to 375 degrees F.
- Beat egg white and water together with a fork until frothy. Generously brush tops of loaves with egg wash and sprinkle with oatmeal.
- Bake for 30-40 minutes, remove from heat and cool on wire racks.
- Serve & enjoy! Yields 2 loaves.
