My daughter loves pancakes, she begs for them almost daily, but we’ve had to limit the pancake making process to weekends when time is less of a factor, but that doesn’t mean that we have plain pancakes every weekend, we experiment with different pancake recipes and different combinations of ingredients to spice up this Sunday special! Check out this recipe if you want to add a little spice & surprise to your next pancake!
The first step is to cook the apples. They will smell delicious as they cook with the cinnamon and butter!
When the apples are soft, add them to the pancake batter. Make sure your griddle is hot before placing the batter on the pan.
- 2 apples, peeled and finely diced
- 2 tsp. cinnamon
- 2 tbsp. butter
- 1 tbsp. brown sugar
- 2 eggs
- 1 cup milk
- 3 tbsp. butter, melted
- 1 ½ cups self-rising flour
- 2 tbsp. sugar
- Melt 2 tbsp. butter in a small sauté pan over medium-high heat, once melted add apples, cinnamon and brown sugar; cook until apples are soft and butter and sugar have reduced to a sticky sauce coating the apples.
- Meanwhile, whisk together eggs, milk and melted butter until well blended.
- Stir in flour and sugar and mix until batter is smooth and free of lumps.
- Fold in apple/brown sugar mixture.
- Heat griddle or large skillet to approximately 375 degrees F.
- Lightly grease, pour ¼ batter onto griddle for each pancake and cook 1-2 minutes (bubbles will form along edges when they are ready to be flipped), flip and cook additional 1-2 minutes until golden brown.
- Remove and keep warm while you make additional pancakes until batter is depleted.
- Top with maple syrup or powdered sugar.
- Serve & Enjoy! Yields 8-10 pancakes.
