Appetizers—I rarely make them and my family rarely splurges on them when we go out to eat, but I always wish we could or would or did or had because they always sound and look so AMAZING, but then I check the price and at the same price as most entrees for about ½ the amount of food it’s fairly easy to say “next time”. See where I’m going with this? If you don’t I’ll explain, we all know cooking at home saves money so here is my tip for saving in 2013, particularly when you go out to eat, SKIP THOSE APPETIZERS and make one night a week or one night a month appetizer night at your house! Indulge in your favorites and cook up some new ones, get the whole family involved and enjoy a fun family night together tasting every yummy little bite! Here is a great one to try!
Infuse the olive oil with the garlic before it is spread on the bread.
After the oil is infused, spread the the garlic oil on the sliced bread.
Toast the bread slices before piling on the toppings!
- 6 slices of French or Italian bread
- 2 Roma tomatoes
- Coarse salt & pepper
- 4 oz fresh mozzarella, cubed
- 2 tbsp fresh basil, minced
- 3 tbsp olive oil
- 1 tsp minced garlic
- Dice Roma tomatoes and transfer to a colander or mesh sieve, sprinkle with salt, toss and set over a bowl to drain for 30 minutes, stirring occasionally. The salt will help extract some of the extra water and juices from the tomatoes so your finished product won’t get mushy.
- Toss the mozzarella and basil together and set aside.
- In a small pan over medium heat add oil and garlic, cook stirring frequently until the garlic lightly browns and begins to give off a strong garlic aroma. (You are basically infusing the oil with the garlic---if you have oil infused with garlic already then skip this step).
- Brush each slice of bread on one side with the garlic oil and layer on a baking sheet.
- Broil on high for 3-5 minutes or until the bread is golden brown and crisp.
- Add tomatoes to the mozzarella and basil, season with salt and pepper, mix and then top each slice of bread.
- Serve & Enjoy!
