As I mentioned before if you’ve been following my recipes on the blog, I don’t have a ton of experience preparing seafood dishes but I am learning and so far I’ve been pretty successful. I was doubtful how well this recipe would turn out when I started because I was just going off in my own direction on this one, but I have to say I’ll be making it again which is always a testament to how well a recipe turned out!
A little background information on this one, I’ve had crab cakes at restaurants before but I kept seeing all these recipes in magazines and on the internet for salmon patties and they all called for frying and whole packages of crackers and this and that and something else, finally I just said forget this, went to the cupboard grabbed a few items, mixed, molded, baked and devoured! Sometimes that’s all you need to do—learn the basic technique (which after reading ALL those recipes I’d pretty much got a handle on) and then trust yourself with the details—cooking should be about creativity and fun whether it turns out in the end or not.
- (2) 7.5 oz cans of boneless skinless Red Sockeye Salmon
- ¾ cup panko bread crumbs
- 1 egg, beaten
- ¼ tsp fresh ground peppercorn
- ¼ tsp Cajun seasoning
- 1 tbsp Lawry’s Tuscan Sundried Tomato Marinade
- ¼ cup milk
- Preheat oven to 350 degrees F.
- Lightly spray a baking pan with cooking spray or lightly coat with vegetable oil.
- In a large bowl break flake apart the salmon with a fork then add bread crumbs, pepper, Cajun seasoning, marinade, milk and the egg. Using your hands mash & mix all ingredients together.
- Using a large spoon or an ice cream scoop (I found this a great way to keep patties uniform in size) form mixture into ½ inch thick patties and place on the baking pan.
- Bake for 15 minutes, flipping them over at about 7 or 8 minutes into the bake time. They are finished cooking when they have a nice golden brown color on each side.
- Serve & Enjoy! Yields 7 patties.
