Confetti Coconut Cookie Sandwich Recipe

Festive and fun this cookie can be decorated anyway you choose to bring a little extra something special to any occasion! My child and I made these, they are sticky to make but simple and a great way to have children help in the kitchen.

These cookies can be put together in just a few minutes since you start with a Nilla Wafer Cookie.

Confetti Coconut Cookie Sandwich Recipe

Ingredients
  • ¼ cup shredded coconut
  • 1 tbsp sweetened condensed milk
  • Salt
  • 16 vanilla wafers
  • 1 cup candy sprinkles
Instructions
  1. In a small bowl combine shredded coconut and sweetened condensed milk, sprinkle with a dash of salt and mix well.
  2. Spread about a tsp on 8 of the cookies then top with remaining 8 cookies and press together to form sandwiches.
  3. With your finger or a butter knife lightly coat edges with more sweetened condensed milk and roll through sprinkles until each cookie is ringed with sprinkles.
  4. Serve & Enjoy! Yields 8 cookies. (Double, triple or quadruple recipe depending on how many cookies you need to make)
Notes
* Substitute sprinkles for mini chocolate chips or finely crushed nuts for variety. * Substitute with red or green sugar or crushed candy canes for a festive holiday cookie!
