People’s Pop Blackberry Yogurt & Honey Recipe + Contest

You’ll want to save a summer hour to create these favorite popsicles with a grown up flare & healthy enough for all your children too! If you’re in New York, you’ll want to try these homemade treats at the People’s Pops shops in New York City. The company’s new book features recipes like this:

Blackberry Yogurt & Honey Pops
 
Recipe type: Side Dish, Dessert
Ingredients
  • ⅔ cup cane sugar
  • ⅔ cup water
  • 3 ½ cups (about 1 pound) fresh blackberries
  • ⅔ cup simple syrup
  • ½ cup plain nonfat yogurt
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
Instructions
  1. First, make simple syrup: In a saucepan, combine cane sugar and water and bring to a simmer over medium-high heat. Stir until sugar dissolves, then remove from heat and let cool (makes about 1 cup).
  2. Puree fresh blackberries in a food processor until smooth. Add ⅔ cup simple syrup, plain nonfat yogurt, honey and fresh lemon juice to the processor and pulse to combine. Strain mixture into a bowl and discard seeds.
  3. Funnel mixture into ice pop molds (available in cooking supply stores), leaving a little bit of room at the top (about ¼ inch) for the mixture to expand. Insert sticks and freeze for 4 to 5 hours or until sold. Unmold and serve.
