For years, I have always eaten potatoes in my mom’s Greek dishes, at our family restaurants, at home, etc! However, I haven’t always heard hearty reviews on the little spud! In fact, many have quit eating potatoes altogether! Thus, I was delighted to find Potatoes Goodness Unearthed!
What a great resource for potato lovers and educators alike? As you are planting your vegetable garden this spring and/or exploring vegetables with your children, rediscover the wealth of potatoes! There are many varieties to choose from: Russets, Reds, Yellows, Whites, Purples, Petites, & more! What fun it will be to compare/contrast the differences of these potatoes and chart the findings with students and/or your children! Math lessons can unearth from potatoes too as your older children list how much each of these types of potatoes cost and/or weigh! And if you are planting a garden and growing potatoes, allow little hands and fingers to discover the potatoes just beneath the soil! These simple delights shouldn’t be amiss in our busy lives!
One of my favorite potato recipes are home-cooked fries! Just slice and fry in olive oil! I don’t even have to dip mine in ketchup! I love to squeeze lemon juice on them. Dash them with salt and pepper———-and for a little Greek flair——-a side of Feta cheese!
