Whole Wheat Blueberry Bread Recipe

A few weeks ago I picked up some whole wheat flour from Sharp Shopper for $1. Although I always buy whole wheat bread, I have never baked with whole wheat flour. I modified this blueberry bread recipe in order to sue the whole wheat flour. If you don’t have any on hand just substitute all-purpose flour.

Whole Wheat Blueberry Bread

1 Cup Whole Wheat Flour
1 Cup All-Purpose Flour
1 Cup Sugar
1 1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Teaspoon Salt
1/4 Cup Butter
3/4 Cup Orange Juice
1 Egg
1 1/2 Cups Blueberries

Heat oven to 350 degrees. Grease a loaf pan.

In a large bowl mix whole wheat flour, all-purpose flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles course crumbles.

Mix orange juice and whipped egg in a separate bowl. Pour the juice egg mixture over dry ingredients and mix until incorporated. Gently fold in blueberries.

Pour batter into loaf pan. Bake for one hour or until toothpick inserted into middle comes out clean.

Tips

  • Add nuts if you like.
  • If you are a beginner with using whole wheat flour, you can use less. It is equal substitution for the all-purpose flour.
  • Great as a snack or for breakfast.
  • Add more or less blueberries depending on what you have up to 2 cups. I originally had two cups but the a lot of the blueberries fell to the bottom.
