This quick and simple pasta skillet has a surprise ingredient & it adds a wonderful creaminess to this dish & a boost of beta-carotene. Can you guess what it is? - 13.25 oz. whole wheat rotini
- 1 lb. lean ground beef or ground turkey
- 24 oz. marinara sauce
- ½ tbsp. dried basil
- Salt & pepper
- ½ cup pure pumpkin puree
- 1 cup shredded cheese (any variety)
- Cook pasta according to package instruction for al dente; drain & set aside.
- In a large skillet brown the ground beef over medium high heat until no longer pink, season with dried basil, salt & pepper. Once cooked through drain excess grease and return to skillet.
- Add marinara sauce, pumpkin puree, rotini noodles to the skillet with the meat and stir to combine. Simmer over medium-low heat for 8-10 minutes or until hot & bubbly.
- Remove from heat and stir in cheese until melted through.
- Serve & enjoy!
