So I just posted the Poppy Seed Balsamic Vinaigrette recipe and I wanted to post the salad recipe that I used the dressing for. Over the weekend we ate out at a local barbecue place and they served a watermelon, cucumber and tomato salad with a buttermilk dressing. I liked it but thought the poppy seed dressing would be better- so I gave it a try. It’s a great combo of semi-sweet but crunchy salad.
- 2 Cups Watermelon chunks
- 1 pint Grape tomatoes, halved
- 1 Cucumber, sliced
- ¼ Cup Poppy Seed Balsamic Vinaigrette
- Mix the watermelon, tomatoes and cucumber together in a bowl.
- Pour the dressing over top.
- Gently toss to coat.
