As we continue on our quest to get healthy in 2013, I tried something new this week! As I entered Trader Joe’s I saw a large display of Organic Extra Virgin Coconut Oil. I have heard about people using coconut oil in replace of other oils (like vegetable oil) but I had never tried it. Hubby doesn’t like coconut flavor at all- so I was a little worried! However, I decided it was worth a try since hubby has borderline high cholesterol.
Virgin Coconut Oil is a solid at room temperature. It melts very quickly when heated though. The nice thing about coconut oil is it has a high smoke point which means you can use it at a high temperature. Although coconut oil does have cholesterol, it is a fat after all, the virgin coconut oil contributes to good cholesterol. Just make sure you are not buying hydrogenated coconut oil- it must say extra virgin or virgin.
So what about the taste?
So far so good! Hubby did not notice when I cooked with the coconut oil. I could taste a hint of coconut- very mild. However, hubby never picked up on it.

Coconut Oil is my go-to for many things now. My husband, like yours, doesn’t like coconut. But, he likes coconut oil. He uses it now when he makes pancakes/waffles for our daughter. I use it at Hanukkah to make my latkes a little bit healthier.
I’ve substituted it in a number of baked goods recipes without a problem of it changing the taste or texture.
Also, I use it when my hands gets dry and cracked. Just a little goes a long way and it’s like magic hand repair oil.

I will have to try baking with the coconut oil! I haven’t tried that yet! I used it for toasting pine nuts for an asparagus salad and it was wonderful. I have also heard that it is great for dry skin. Thanks so much for you comment!
