One fun way to eat sweet potatoes is to make fries! My boys love them!
Sweet Potato Fries
Sweet Potatoes
Olive Oil
Sea Salt
Okay, I know I didn’t give you exact measurements! Here is the thing, you can make as many as you want! I usually use two sweet potatoes. Peel them and then use a sharp knife to cut into 1/2″ wedges. OR buy the precut sweet potatoes in the produce department. I recently scored a precut bag of sweet potatoes for $0.99 at Kroger which made this recipe super easy!
Heat your oven to 450 degrees.
Toss the sweet potato wedges with olive oil. Sprinkle with sea salt. Place on a baking sheet and bake for 10 minutes. Flip the wedges over and bake for another 10 minutes.
Basil Aioli
1/4 Cup Mayonnaise
1 Garlic Clove, pressed
1 Teaspoon Lemon Juice
1 Teaspoon Basil (I dried my homegrown basil from last summer. It was so fragrant & yummy!)
Mix all ingredients in a bowl. Serve alongside Sweet Potato Fries.
Tips
- My boys do not care for the Aioli but they love the fries! I love the Aioli- fresh taste with a little zip.
- If you have extra Aioli, use it to make sandwiches.
- Sweet Potatoes are a great source of fiber and potassium. Making “fries” is a great way to get kids to eat their vegetables!
