We had some apples to use up from our apple picking adventure. I came across a fruit salsa dessert recipe and decided to make something similar. This fruit mixture would be great on pancakes or waffles!
Strawberry Apple Salsa
2 Medium Apples, peeled and diced
1 Cup Strawberries, Diced
1 teaspoon Lemon Juice
2 Tablespoons Brown Sugar, packed
2 Tablespoons Apple Jelly
Dash of Cinnamon
Mix diced apples and strawberries together and add lemon juice. In a separate bowl mix brown sugar, apple jelly and cinnamon. Pour mixture over fruit. Fold sauce in gently.
Cinnamon Tortilla Chips
4 Flour Tortillas
1 Tablespoon Butter
1 Tablespoon Granulated Sugar
1/2 teaspoon Cinnamon
Preheat oven to 350 degrees.
Butter the tortillas. In a bowl combine sugar and cinnamon. Sprinkle the sugar and cinnamon mixture over the buttered tortilla. Take a pizza cutter or knife and cut the tortilla into triangles. Bake at 350 degrees for 10-12 minutes or until golden brown and crisp.
Serve the Strawberry Apple Salsa with the Cinnamon Tortilla chips! You could also use the Cinnamon & Sugar Pastry recipe if you don’t have tortillas.
Tips
- Try using different fruit. Oranges and kiwi would also be good additions.
- Use a different type of jelly if you don’t have apple jelly on hand.
- Use Splenda instead of real sugar. I used Splenda brown sugar and it still tasted great!
